Time needed
- curing: at least 1-2 hours
- smoking: 6-8 hours
Process
- grind red and black pepper
- rub the spices onto ribs
- leave the meat overnight in fridge
- start smoker and keep the temperature below 200F
- add wood chips for flavor
- place ribs in smoker and keep them there for 4 hours
- baste ribs with basting sauce to keep them moist
- after 4 hours wrap ribs in aluminum foil
- keep ribs in smoker for another 2.5 – 4 hours
- remove ribs from smoker and let them cool down
