Ingredients
- pork chops
- garlic
- garlic salt
- Prague Powder
- bay leaves
- salt
- cumin seeds
- brown sugar
- allspice
- oregano
Time needed
- curing: at least 4 days
- smoking: 5-7 hours
Process
- acquire pork chops (bone-in)
- rub spices onto meat
- make brine with kosher salt, brown sugar and Prague Powder
- cure meat in brine for 4 days
- smoke for 4 hours
- wrap the meat in aluminum foil
- keep in smoker for another 3 hours
- remove from smoker and keep in foil for 30 minutes
- slice
